    Little Snack

    Mommy: "I said you could have a strawberry but..." Tama: "It's just a little snack." Mommy: "It's bigger than your head!" Tama: "Yah. it looks yummy too." Mommy: "We are going to have dinner in a little while." Tama: "That's okay. This can be my dinner." Mommy: "And tomorrow's breakfast and lunch..." 😆 ~~~~~ This is the biggest strawberry I can ever recall seeing. It was the size of my palm. Tama may not like eating a lot of baked goods (even though he likes baking) but he eats fresh fruit like Yuriko eats cookies. 😁 ~SK

    Tama: "Mommy You did it! You made cutout cookies!!" Mommy: "Well they still need a little work since I used too much flour-" Tama: "But you DID IT!!! Now we can make super cute cookies at Christmas!" Po: "Nothing goes better with a cookie than a cup of tea..." Po: "Oh my. This is a rather big cookie isn't it?" Mommy: "So do you like them?" Tama: "Can't talk. Eating." *om nom nom nom* A short while later... Dakota: "Darlin' where did you get the sweets?" Yuriko: *raises the cookie to her mouth* "I found them on a cookie sheet. They looked really cute so they must be mine." Dirk: *just listens* Yuriko: *rapidly starts eating the cookie* Dakota: "Did ya ask Tama if you could have them? I ain't too sure if those might be fer Rainie. You know how much she is obsessed with Hello Kitty." Yuriko: "Nobody was guarding them so... Finders keepers." *stuffs the cookie in her mouth* Dirk: *mumbles* "Does she even eat anything healthy? At all? Ever?" Yuriko: "Tama knows that whenever he makes cookies that I get the first ones. He can always make more. He likes making cookies for is best big sister. And he hasn't done it in a long, long time." Dakota: "Darlin'... Tama is not yer personal baker. Not to mention that he's been working hard with SK to reconfigure a lot of the old recipes. I ain't imagine they would take too kindly to ya eatin' it all up." Yuriko: "Why would they make cookies if they aren't for me?" Dirk: "I think I even heard that they were made from beans. Is that even right?" Dakota: "Ya know ya could share some with us. You have plenty." Yuriko: *sigh* "Okay..." Dirk: "Beans, beans, the magical cookie..." *makes a fart noise and chuckles* Yuriko: *Starts chowing down on another cookie* "So yummy and crunchy..." Dakota: *holds half the cookie her girlfriend gave her* "Honey pie, I think we need ta have a talk about sharing..." Dirk: *speaking with a deadpan tone to his voice as he holds the other half of the same cookie* "Wow. Your generosity is astounding." ~~~~~ Last September I bought these cookie cutters for Tama, before I even knew if they could be used for making cookies at all. I'm so delighted that I can actually use them for actual sugar cookies. This means I'm so very, very close to remaking my mom's gingerbread cookie recipe. Since I was a kid, nothing has meant more Christmas to me than gingerbread cookies with royal icing. I used to sit and decorate batches of them most years. And I always love gingerbread houses even though I've rarely tried to make them. I'm sure most people wonder why I'm so amazed over something as simple as cutout cookies. It just has seemed like the 'impossible' to remake recipes to me. So to have them, keeping their shape enough that Po could pinch it and it didn't even crumble, and despite using garbanzo and soy flour they still taste rather close to wheat cookies. It is such an old habit of mine to challenge myself to tackle the most difficult or impossible things first. I'm just amazed that I managed it, mostly just because of intuition on how the various ingredients work. Also I'm starting to figure out how to DD pics again without going beyond my limits. They may not be the greatest but I'm happy to share their goofy little stories. I hope to go over Dirk's story at some point but it would probably take more of the 'full stage' layout to do it right and that would take a massive amount of energy just to set it up. So if nothing else here's his first snapshot.🙂 (He's still a little of a work in progress. I forgot that his hair needs to still be trimmed, once I can figure out how to do it without ruining this wig.) ~SK

    Little Bites

    Tama: "I'm all done making my gyoza. Can I have some thing to cover them with so they won't dry out before dinner?" Tama: "I like the size of these noodles but I think we need to make more." Mommy: "You do realize they are going to expand once they cook don't you?" Tama: "Yah but we need make lots so I can have yummy soup if I get sick." Mommy: "You never get sick. You would just want to pretend you are sick so you could snuggle in bed and have someone cook for you, letting you be really spoiled." Tama: "Maybe..." 😁 ~~~~~ Really exhausted from playing with various egg noodle doughs today trying to figure out what one works best and if any could be used for gyoza. Tried some the other day without eggs and just used water and they failed completely as noodles. I was expecting more of the same today. Brown rice flour makes decent noodles but would not hold together for shaping the gyoza. Garbanzo/chickpea flour worked for both but always makes a strangely firm noodle no matter how it's cooked. But the red lentil flour (in the pics above) works brilliantly and very close to the texture of wheat noodles. I was really expecting that one to fail. I've missed gyoza a whole lot so I'm just delighted that the lentils worked far better then I ever expected. Plus they are color-change noodles. Uncooked red lentils are reddish-orange but turn yellow once cooked. As usual Tama has been delighted that we have been able to work on food, even if it is time consuming. Plus making MDD sized real food is just fun. I honestly didn't think I would be able to make Tama sized gyoza. I used an old gallon milk jug lid to cut out the circles (I use a wide mouth canning jar ring for the full-sized ones in the background) and cut out the center so the dough was easier to pop out. Even if I could cut them out I was highly doubtful if I could fill it, let alone getting the folds in properly. I keep cracking up that it's possible. We won't know until later if they cook properly or not, but it made me really happy getting a pic of Tama with his gyoza. It has been really fun doing some small cooking projects with him since he was always my little helper in the kitchen. Food updates may not be thrilling to anyone else but for me it is helping me connect with Tama in ways that have been vacant the last two years and in turn not make all the DD stuff not feel so overwhelming. And being able to share the photos here like I used to makes me really happy as well. I hope I remember to take a pic of Tama holding one of his gyoza so the scale is easier to see properly. They are tiny compared to the full sized ones. ~SK

    Let Us Eat Cake

    Tama: "I think the cakes are cool now Mommy. They are pretty cute. I'm not sure what kind of frosting we can use." Mommy: "That's okay, we can figure that out later. I still need to wait and see if I can tolerate the sugar first." Tama: "You can have the first piece Mommy and I can have the second." Mommy: "We better hurry and eat both cakes before Yuriko finds out." 😁 ~~~~~ Two and a half years in and I'm still trying to find out what foods I can eat. This is the first time in more than two years that I've eaten granulated sugar. Baking without leavening is still an adventure. These are the first 'shaped cakes' I've had in 3+ years. They need a lot of work. 😂 I slightly altered a rice flour "steamed buns" recipe and they are pretty dense. I think more egg whites, less flour, a different flour mix, and baking them would be a big improvement. I'd be delighted to end up with a muffin texture eventually, but both Tama and I are super excited that this worked in some silicone cupcake/doughnut molds I bought. This was the easiest 'baked' goods I could think of that only had the sugar as the unknown factor. I'm so hoping that my body will tolerate the sugar, not because i'll be eating it all the time but because it may be the last thing I still need before making sugar cookies and gingerbread with Tama will be something I can do again. The last two Christmases have been heartbreaking because his biggest wish was for us to make Christmas cookies together. We also accidentally found out that there is a brand of cheddar I can have as well as unsalted butter. I still can't eat a lot of dairy, but I can have some. The butter/fats issue was another massive stumbling block with relearning how to bake within my food tolerances. Mostly Tama was super excited to have any form of real cake in the house that I could have and wanted to make sure we got some pictures. Even if it turns out that the sugar is a no-go, at least the rest of the recipe will still be usable with a sugar replacement. We are also still here, even though life has gotten really slow. I'm just trying to do the best I can everyday even when it seems my short-term memory is out to sabotage me. As always I'm still finding things that make me happy, even if I have to work it around Tama wanting to snuggle. 😆 ~SK
